I still find it difficult to believe that such a good roaster as this one can only cost $40, but I am glad we bought one from Amazon. Our first turkey that we cooked was this Thanksgiving (2008), and we did so with this roaster. We cooked the 18 pounder at 500 degrees F for 30 minutes, then lowered the temp to 375 degrees F for about 2.5 hours. We monitored the breast temp with a temp probe until it reached 165 degrees F. We bought a Circulon 16"x13" roaster to handle larger roasts and to handle a 20+ pound turkey in a gas wall oven. First, the good points.
This pan had room for a 21 lb. turkey plus plenty of extra space to accommodate four large potatoes and a couple handfuls of baby carrots. There was never any danger of juice overflow, a risk we've sometimes had with similar sized turkeys in disposable pans. For Thanksgiving especially, this pan is a noticeable improvement.
